The first time I made this soup, I was pleasantly surprised how quickly it was eaten by my kids. Love when that happens! This soup has become one of my kids’ favorite meals.
White Chicken Chili
Ingredients
1 Tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
1 teaspoon cumin
1/4 teaspoon chili powder
1 4oz can green chiles
2 cans white beans
2 quarts chicken broth
3 cups cooked, diced chicken*
juice of 1 lime
3 Tablespoons chopped cilantro
salt & pepper to taste
sour cream, optional
Directions
Heat oil in large pot over medium heat. Saute onion until translucent. Add garlic, cumin, chili powder, and green chiles. Saute 1-2 minutes until fragrant. Add beans and broth. Simmer for 20 minutes. Add chicken, lime juice, and cilantro. Top (or mix in) with sour cream if desired.
*If you don’t have cooked chicken on hand, simply cook 2-3 chicken breasts or 3 cups diced chicken in the pot before starting the recipe. I prefer to remove the chicken from the pan and add at the end so it doesn’t cook too long in the soup.
