Oh greens! The thing we should all be eating more of but most of us just don’t really like. Yep, I said it. I’m not a huge fan of how greens taste. They just aren’t that good!

BUT, I love how they make me feel. The more greens I eat, the better I feel. Haha. No, seriously. I’ve come to love the way I feel when I eat more vegetables on a daily basis. And it’s worth it to me to feel that way. Even if my jaw is tired of chewing salads, and I’d much rather be eating an ooey-gooey grilled cheese sourdough sandwich.

 

What’s worse than eating greens you might ask? Eating cooked greens of course! They get a little slimy and sometimes smell funny. And the texture. Ew. But cooked greens are soooooo good for you! So, a few years ago, I had this conundrum – add more greens, but they are kinda of gross. How could I resolve this?

Ta-da! Chop them up so small they are nearly undetectable. I started with three cups and got them down to about one cup.

And, biggest bonus of all – they make your food look so much prettier! So, that’s my method of adding more greens into just about everything we eat with little pushback from me the kids.

I add them to just about everything the last few minutes of cooking – scrambled eggs, pasta dishes, soups, stir-fry’s, you name it. It looks pretty, doesn’t mess with the overall flavor or texture, and adds to your daily dose of green goodness vitamins & minerals.

I now go through a bag of power greens from Costco like nobody’s business, and I’m not the only one reaping the benefits – my family is too. Bonus!
