Every time I make a batch of these little bites of goodness, I wonder why I don’t make them more often. They are that good. I usually triple or quadruple the batch and freeze them. It’s easy to grab a couple bites for on the go snacks or a quick breakfast.
Best Energy Bites Recipe
Ingredients
3/4 C nut butter, (room temp)
1/2 C raw honey
1/4 T vanilla
1/2 T cinnamon
pinch salt
1 C shredded coconut
1 C sprouted rolled oats
Directions
Stir nut butter, honey, vanilla, cinnamon, and salt in a medium bowl until combined. Mix in shredded coconut and rolled oats. Form into small balls. Refrigerate or freeze for later.
Nut butters have different consistencies. If you find your mixture is too sticky, add more oats or coconut. If it’s too dry, add a little more nut butter or honey.
