Healthy No Bake Cookies

Growing up, my mom would frequently make no bake cookies. I always loved watching her make them and asked to scrape the pot clean when she was done. As I got older, my brother and I started making them ourselves. The original recipe contains a whole cup of sugar, so I wanted to create a healthier version I could happily give my kids any time. I cut the amount of sugar in half and replaced it with a mix of coconut sugar and honey. I also prefer sprouted rolled oats because they are more easily digested.

These little cookies make a great snack (and maybe even breakfast). I like to double the batch and put half in the freezer for when I want something sweet. These cookies are soft and need to be stored in the refrigerator, and I actually prefer them cold, too.

Healthy No Bake Cookies

Ingredients:

1/4 cup coconut oil
1/4 cup coconut milk
1/4 cup coconut sugar
1/4 cup raw honey
3 Tablespoons cocoa or raw cacao

1/4 cup natural peanut butter
1/3 cup shredded coconut
2 cups sprouted rolled oats
1/2 teaspoon vanilla extract
1/8 teaspoon salt

In a saucepan over medium heat, stir coconut oil, milk, coconut sugar, honey and cocoa together. Watch carefully and bring to a rolling boil. Boil 1 minute. Remove from heat. Add peanut butter, shredded coconut, oats, vanilla and salt. Scoop onto parchment lined cookie sheet. Refrigerate until set. Store in airtight container in refrigerator or freezer. Enjoy!
